Soft, delicious almond cookies from almond flour. Contain maple syrup instead of sugar, healthy almond flour and coconut oil. With all these nutrients, these cookies are very healthy.
1.5 cup almond flour
A small pinch of cinnamon
A pinch of salt
1/2 teaspoon vanilla extract
15 whole unroasted almonds
1/4 teaspoon almond extract
1/4 cup real maple syrup
1/4 teaspoon baking soda
2 tablespoons coconut oil
Preheat oven to 160 degrees Celsius and line a baking pan with parchment paper.
Mix the dry ingredients well and make sure there are no lumps.
In a separate bowl mix the wet ingredients in a slow whisk.
Gently add the wet ingredients into the dry ingredients while stirring constantly.
Make balls out of the dough, place on the pan, flatten slightly with your hand, and place a whole almond in the center of each cookie with a slight press to create a socket where the almond sits.
Bake for 15 minutes until the cookies are light brown.
You must cool the cookies before serving or storing them.
