Quick, delicious muffins from almond flour that kids love. 5 minutes prep plus 15 minutes baking and you have really tasty muffins. They also taste good hot or cold so you can prepare and serve immediately.
2 cups almond flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup melted butter
1/3 cup Pinna-colada or Irish Cream
1 cup berries (any kind. If you use strawberries, cut them into very small cubes)
Stevia or agave to taste
Preheat oven to 180 degrees celsius and line 12-14 molds for muffins with paper baskets.
Mix the almond flour, baking powder and salt.
In another bowl mix the butter with Pinna-colada or Irish Cream.
Add the wet ingredients into the dry ones.
Mix well until evenly mixed.
Add the berries.
Add stevia or agave to taste.
Divide the mixture into the paper baskets – fill 2/3 of the height of the basket.
Bake for 15 minutes.
