There’s a reason why quinoa made the list of superfoods. Besides vegetable protein, it contains many healthy and essential nutrients. Here it’s in a delicious breakfast version.
2 teaspoons vanilla extract
1.5 cups water
1 teaspoon Cinnamon
1 cup of raw quinoa
1/2 cup green raisins
1/2 cup sugar-free applesauce
1 cup lukewarm milk
1/4 cup chopped pecans
1 Grand Smith apple without the core and diced
In a medium saucepan place vanilla extract, water, cinnamon and quinoa, bring to a boil, and cook over low heat for 15 minutes.
Remove from the heat, add raisins and apple sauce and stir.
Add the milk and stir.
Divide into 4 bowls and sprinkle over pecans and apple.
