A delicious apple cake that is also easy to make. Gluten-free, low-carb, and without harmful white sugar. Suitable for any diet as a sweet treat and you can give it to kids as much as they want without worrying about giving them sweets.
4 large or 6 medium apples
1/4 cup honey or agave nectar and another 2 tablespoons
1/4 teaspoon cinnamon
1 teaspoon lemon zest (only the yellow part, the white part is bitter)
4 tablespoons coconut oil
2 cups walnuts
Preheat oven to 190 degrees.
Peel the apples, remove the cores and slice them into thin slices.
Arrange the apples in a uniform layer in a medium Pyrex pan.
Melt 2 tablespoons oil and add lemon zest, cinnamon and 2 tablespoons honey or agave.
Drizzle evenly over the apples.
In a food processor, grind the nuts until you get a coarse flour.
Mix the nuts flour with 2 tablespoons oil, the rest of the honey or agave and the egg.
Cover the apples in an even layer and fasten it tightly with your hands.
Bake 45 minutes.
Serve hot with vanilla ice cream or cold with real maple syrup.
