A different and interesting breakfast. Although the preparation time is a little longer than an omelet it’s totally worth it. If you bake it for only 8 minutes you get a relatively runny egg that’s fun to dip bread in.
2 ripe but not completely soft avocados
Salt and pepper
Preheat oven to 180 degrees.
Line a Pyrex pan with parchment paper.
Halve the avocado lengthwise and remove the pit. Brush inside with olive oil and sprinkle with salt and pepper.
Place the avocado halves in the pyrex and break into each half one of the eggs.
Bake for 10-15 minutes, depending on how much you like the egg to be cooked.
