BBQed Princess of the Nile or Antias Fish

Ingredients

2kg princess of the nile or antias fish cut into cubes

5 crushed garlic cloves

50 g butter cut into cubes

1 large finely chopped onion

Juice from 1.5 lemons

1/2 cup white wine

3 sliced tomatoes

Preparation

In a bowl mix garlic, onion, lemon juice and white wine.

Cut a large sheet of foil, fold it in half and form a boat. Ensure that the edges are tightly sealed so that the liquids do not escape.

You can use a disposable pan for the bbq.

Line the bottom of the boat/pan with tomato slices and arrange the fish on top.

Pour the sauce all over the fish and sprinkle over the butter cubes.

Close the boat on top and tighten well. If you use a pan, cover it with foil and tighten the edges tightly.

Place on the barbecue for half an hour.
