1 cup beans that were soaked overnight
2 very finely chopped onions
Chopped mint leaves from 3 stems
2 large tomatoes ground in a food processor or grated, or 1 can of crushed tomatoes
1 chopped red bell pepper
1 teaspoon sweet paprika
1/2 teaspoon of spicy paprika or ground chili (optional, if you like spicy)
3 tablespoons coconut oil or oil spray
Put the beans in a pot, cover with water half an inch above the height of the beans, add oil, carrots, onions and red pepper.
Bring to a boil, lower the heat and cook over low heat until the beans are soft.
Add the remaining ingredients, bring to a boil, and cook for another 15 minutes over low heat.
