Breakfast polenta with banana

A different and surprising breakfast. While the preparation is longer than an omelet or porridge, it’s worth investing the time to innovate and surprise the family.


2 cups water

2 cups lean milk

A cup of instant polenta for quick cooking (cornmeal, not cornflour)

1/4 cup honey

Banana cut into thin slices

Half a cup of yogurt

Pinch of salt


Place a medium-sized saucepan over medium heat and pour in water, milk, and salt and bring to a slow boil while mixing occasionally so the milk doesn’t burn.

Pour in the polenta and continue to cook while stirring until the mixture thickens.

Lower the heat until the mixture bubbles slowly.

Continue cooking for another 5 minutes while stirring and remove from the heat.

Let the polenta cool a little, then add honey, banana, and yogurt and stir.

*You can cook in advance until the last step. Before serving, heat in the microwave, then add the honey, banana, and yogurt.
