Green soup that is rich in nutrients from spinach and broccoli. Easy to prepare and healthy, and the potatoes make it thick and rich, making it a soup that’s good as a meal.
1 large chopped onion
2 crushed garlic cloves
1 liter chicken soup (you can use powder)
1kg potatoes cut into small cubes
1 small package chopped spinach leaves
1 package frozen broccoli – defrosted in boiling water
2 tablespoons oil – preferably coconut
I cup cream – for vegans can be replaced with soy cream
Heat the oil in a saucepan and add the onion and garlic.
Steam for 3-4 minutes until the onion is soft and transparent. Must mix every minute.
Add potatoes and broccoli, cook for 5 minutes – stirring occasionally.
Add soup and season with salt and pepper.
Cover and bring to a boil.
Lower the heat and cook over medium heat 15-20 until the potatoes are soft.
Add the spinach and cook for another 2-3 minutes while stirring occasionally.
Remove from the fire and cool a little.
Grind in a food processor with a hand blender and return to the pot.
Add cream, correct seasoning and bring to a boil again.
