A famous Italian dish. Although this dish is not entirely dietary because it contains breadcrumbs and you also fry the schnitzels, it’s occasionally worth the treat.
4 large chicken schnitzels
1 cup diced fresh mushrooms
1/2 cup Marsala wine
4 tbsp olive oil
4 tablespoons butter
3 tbsp cream
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
5 tbsp breadcrumbs
To the breadcrumbs add oregano, salt, pepper, and parmesan and mix well.
Place the mixture in a bag, add the chicken and shake it until the chicken is well coated.
Remove the chicken and shake it so it doesn’t have too much coating on it.
In a frying pan, heat the butter and olive oil over medium heat.
Fry the chicken for 3 minutes on one side, flip and add mushrooms.
Continue frying the schnitzels with the mushrooms for 3 minutes on the other side.
Add the wine, cover and continue cooking over low heat for 10 minutes.
Remove the chicken from the pan and set aside.
Pour the cream into the pan and heat while stirring until the mixture is bubbling.
Arrange the chicken on plates and pour the sauce over it.
