1 ripe avocado
2 chicken breasts cooked and diced
1/2 cup finely chopped celery stalks
1/4 cup finely chopped purple onion
1 tsp lemon juice
4-6 lettuce leaves – depending on size
Tear the lettuce with your hands into large pieces and divide into two bowls.
Mix all other ingredients well.
Divide in half and place over the lettuce leaves.
If your hosting, instead of tearing the lettuce and placing the rest of the ingredients on top, you can roll the salad in the lettuce leaves and serve as interesting rolls.
