Chicken Tenders with Kale

Kale is known as a particularly healthy superfood. It usually appears in recipes with salad or grilled kale. Here, with chicken tenders, it’s a different and interesting recipe for Kale.

Ingredients

  • 1 kg chicken tenders
  • 2 kale bundles
  • 1 cup mushrooms
  • 1 chopped onion
  • 4 crushed garlic cloves
  • 1 can of chopped tomatoes (not tomato paste)
  • 1 small can tomato paste
  • 4 tbsp. olive oil
  • Pinch of salt
  • Pinch of black pepper

Preparation

Cut the chicken into wide strips.

Cut the kale into strips.

Cut the mushrooms in half, and if the mushrooms are large to quarters.

In a deep frying pan heat the olive oil, add onions, garlic, and mushrooms, and steam for 5 minutes.

Add the chicken and kale, stir well, and cook for about 5 minutes until the kale “wilts.”

Add the remaining ingredients and mix well.

Bring to boil, lower the heat, and cook over low heat for 10 minutes.

Serve immediately.
