Quick and delicious almond cookies. Five minutes prep, ten minutes baking and you have amazing gluten-free, sugar-free cookies rich in vegetable protein.
1 cup almond flour
1 tablespoon cocoa powder
1/2 teaspoon cinnamon
5 tablespoons agave nectar
2/3 cup almond butter
Preheat oven to 160 degrees.
Line a large baking pan with baking paper.
In a bowl mix all the ingredients and knead them until you get an even dough.
Spread baking paper on the marble, place the dough on it and place on top another sheet of baking paper.
Using a rolling pin, roll the dough between the two pages up to half a cm thick.
Using a shape pattern or a cup with narrow margins, cut cookies from the dough and arrange them on the baking pan an inch apart.
Continue kneading, rolling and cutting cookies until all the dough is finished.
Bake for 8-10 minutes and refrigerate well before eating.
