Cinnamon Danish

Coconut Flour Cinnamon Danish – Gluten-Free

Cinnamon Danish with coconut flour – delicious and competes with the best restaurant or bakery. Quick and easy to make and looks beautiful. Gluten-free, Low-carb, and with low glycemic index.

Why coconut flour?

A very healthy Flour, with a unique flavor and easy to work with. Does not contain gluten and on the other hand contains a lot of nutrients to the body.

Filling Ingredients

  • 1.5 teaspoon cinnamon
  • 1/3 cup chopped walnuts
  • 2/3 cup coconut sugar

Icing Ingredients

  • a teaspoon of vanilla extract
  • ¾ cup coconut sugar
  • Enough milk to create a thick mixture

Danish Ingredients

  • One package yeast
  • Cup of milk
  • ½ cup coconut sugar for the dough and another two tablespoons for the glaze
  • Two tablespoons butter, melted
  • ½ teaspoon salt
  • Teaspoon grated lemon zest – the yellow part only, The white part is bitter
  • A teaspoon of vanilla extract
  • Two teaspoons baking powder
  • 2.5 teaspoons Xanthan Gum
  • ¼ cup of coconut oil
  • Cup tapioca starch
  • ½ cup coconut flour
  • Egg

Preparing The Filling

  • Mix all ingredients well and set aside.

Preparing The Icing

  • Grind the coconut sugar in a coffee grinder until powdered sugar.
  • Mix all ingredients and set aside.

Preparing the Danish

  • Preheat oven 190ºC/ 375º and coat a pyrex baking pan with oil and flour.
  • Mix the yeast with the milk and set aside for 5 minutes.
  • Mix sugar with butter until blended.
  • Mix the milk with the sugar.
  • Start adding the remaining ingredients one at a time while stirring.
  • Spread a parchment paper on the counter and sprinkling with one tablespoon of coconut sugar.
  • Flatten the dough with your hands, sprinkle it with the other spoon of sugar and place over it another parchment paper.
  • Flatten the dough between two pages with a rolling pin to a thickness of 1-2 cm.
  • Remove the top paper and spread the filling on the dough. Leave about a centimeter on both sides without filling.
  • Roll the dough while removing the second page.
  • Cut the rolls to 9 danishes.
  • Arrange in the Pyrex with 2-3 cm from each other and bake for 20 minutes.
  • Spread the icing on danishes immediately after removing from the oven.
  • Can be eaten hot or lukewarm.

Variations

  • Instead of cinnamon, you can put two tablespoons of cocoa powder.
  • Instead of nuts, you can use raisins or pecans.
  • You can add very thin slices of an apple to the cinnamon danish, or very thin slices of banana to the chocolate (cocoa) danish.
