Coconut Flour Cornbread

Cornbread from Coconut Flour – Gluten-Free & Low-Carb

Light and tasty bread from coconut flour. Gluten free, low carb and very easy to make – a total of 5 minutes of preparation and 20 minutes of baking.

Why Gluten-free?

Recently we hear more and more about the gluten-free diet, and that this diet is recommended. But if the person doesn’t have celiac disease why switch to a gluten-free diet? (Celiac, gluten-sensitive and cannot eat Gluten)

Well, the answer has two parts:

  1. Even if you are not sensitive to gluten (celiac) it has adverse effects on the body, such as diarrhea, constipation, gas, stomach aches etc. that just “disappear” when the diet is gluten-free.
  2. The second reason is eating foods that contain gluten. Even if the person is not sensitive to gluten, but overweight or struggling all the time to stay slim, it’s better to drop the gluten. Gluten itself is not what causes the phenomenon, but the foods that contain gluten.

Why coconut flour?

A very healthy Flour, with a unique flavor and easy to work with. Does not contain gluten and on the other hand contains a lot of nutrients to the body.

  • ¼ teaspoon of salt
  • ½ cup almond flour
  • ¼ cup coconut flour
  • ¼ teaspoon baking soda
  • Three eggs
  • Two tablespoons honey
  • ¼ cup melted butter
  • ½ cup almond/soy milk


  • Preheat oven to 160 degrees Celsius/ 330 Fahrenheit and line a square baking pan with baking paper.
  • Mix all dry ingredients in a bowl until they are uniformly mixed.
  • In a separate bowl whisk manually all the wet ingredients.
  • Gradually add the dry ingredients into the wet and continue to stir until the mixture is smooth and free of lumps.
  • Pour into the pan and bake for 20 minutes.
  • Let it cool before slicing, otherwise falls apart.
