1 cup white rice flour
1/2 cup coconut flour
3 big eggs
1 cup grated Parmesan cheese
1 cup unsweetened almond milk
1/2 cup coconut oil
2 tablespoons corn starch
1 tsp baking powder
2 teaspoons garlic powder
1 tsp Xanthan Gum
1/4 teaspoon salt
Preheat the oven to 190 degrees Celsius and line a baking pan with parchment paper.
Separate the eggs.
In a separate bowl mix the dry ingredients well.
In another bowl whisk the yolks with almond milk and coconut oil.
Create a depression in the middle of the dry ingredients and pour in the yolk mixture.
Mix until smooth and then stir in the Parmesan cheese.
Whisk the egg whites to a firm foamy and stir into the rest of the ingredients in folding movements.
Pour the cracker mixture into the pan with a spoon.
Bake for 12 to 15 minutes until the cackles are golden at the edges.
