A delicious and quick salad, which is also an interesting addition to the meal and a nice first course. Healthy, tasty, easy to prepare, and low in calories.
A medium white cabbage
2 sour green apples – cubed
2 chopped green onions
2 chopped celery stalks
1/2 cup chopped walnuts
1 heaped tablespoon mayonnaise
2 teaspoons lemon juice
2 teaspoons grated lemon zest (yellow part only, the white is bitter)
Salt and pepper to taste
Cut the cabbage into thin strips.
Mix the apples with lemon juice to prevent blackening.
Mix all the salad ingredients together and refrigerate for an hour.
