1 cup of corn kernels – can be fresh, frozen or canned
1/4 cup coconut flour
1/4 cup thin cornmeal
2 tablespoons coconut oil
1/2 teaspoon salt
1/4 teaspoon garlic powder
Crush the corn kernels in a food processor until smooth.
Add the remaining ingredients and continue mixing in a food processor until a smooth mixture is obtained.
Heat a frying pan and oil it.
Take a spoon from the batter and slide into the pan. Continue until the pan is full.
Fry the fritters for 2 minutes on each side until they are crispy and brown.
Arrange on absorbing paper before serving.
