A delicious and special omelet that also looks impressive. The combination of the tomatoes, spinach and feta comes out just amazing. Although it takes 10 minutes longer than a regular omelet to make it, it’s worth every minute.
1 tablespoon olive oil
1 medium chopped tomato
1 cup chopped spinach
1/2 cup feta cheese cut into small cubes
Salt and pepper to taste
Heat a medium frying pan, add the olive oil, tomato and spinach.
Cook while stirring for 10 minutes.
Whisk the eggs with salt and pepper.
Add the eggs, stir and let it simmer for half a minute.
Sprinkle over the feta, wait a few seconds, and gently flip the omelet so it won’t break.
Cook until the other side is cooked and serve.
