A special and interesting brownie that doesn’t require baking. Very healthy without white sugar or flour, instead it’s made with ground almonds and dates. Gluten-free, relatively low-carb compared to the traditional brownies and no harmful white sugar.
1.5 cup anroasted almonds
1 cup pitted dates
1/2 cup almond butter
1/4 cup cocoa powder
Medium Pyrex baking pan
Grind the almonds in a food processor with the spinning blade until you get a paste that resembles coarse flour.
Add the dates, almond butter and cocoa powder and continue processing until the mixture is uniform.
Line the Pyrex with baking paper, transfer the mixture into it and press on it with your hands so it’s as dense as possible. Sprinkle over the coconut chips.
Refrigerate for at least 2 hours.
Cut into squares and serve.
Keeps in the fridge for 2 weeks.
