A very popular spice mixture in Italian cuisine. Suitable for grilled vegetables, chicken and meat, salads, casseroles and Italian food.
- 3 tbsp dry basil
- 2 tbsp dry oregano
- 1 tbsp dry rosemary
- 1 tbsp dry coriander
- 1 tbsp dry thyme
- 1 tbsp dry mint
- 1 tbsp black pepper
Grind all the spices together in mortar and pestle for 5-7 minutes, or in a coffee grinder in a few short pulses.
Keep in a sealed jar, preferably in the fridge.
Suitable for the seasoning of chicken, meat, fish, Italian food and casseroles.
