A light salad that requires a few minutes of preparation. It has a very interesting taste and also looks very beautiful because of the contrasts of color between green and purple.
1 cucumber cut into the thinnest circles possible
1/4 purple onion cut into the thinnest semicircles possible
1 tablespoon apple cider vinegar
A few drops of stevia, or a pinch of xylitol
1/4 teaspoon salt
1/4 teaspoon white pepper
Mix all the dressing ingredients and set aside for a few minutes to mix the flavors.
Mix the cucumber and onion.
Pour the dressing and toss the salad until all the vegetables are covered.
