An amazing first course that’s very easy and quick to prepare. There are different versions of this dish in quite a few restaurants, but in my opinion, this version tastes best.
1 kg mushrooms
3 crushed garlic cloves
2 tablespoons chopped parsley
3 tablespoons quality oil – not olive
Salt and pepper to taste
Rinse the mushrooms and slice into slices lengthwise.
Squeeze the lemon over the mushrooms and mix well.
Heat a large frying pan over high heat and add the oil. When the oil is hot, add the garlic and fry for 30 seconds.
Add the mushrooms to the pan and mix well. Cover and cook for 4-5 minutes. During this time mix a minimum of two to four times.
Remove the lid, add the salt and pepper and continue cooking while stirring until all the liquid evaporates and the mushrooms start to brown. It takes something like five minutes.
Remove from the heat, add the parsley, mix well and serve.
