1 cup pecans
1 cup crumbled cookies
1/4 cup melted butter
Pinch of salt
500 g cream cheese
3/4 cup coconut sugar
1 tsp vanilla extract
2 cups defrosted berries (doesn’t matter which – one kind or a mixture)
Preheat the oven to 175 degrees Celsius and line a round baking pan with baking paper.
In a food processor with the spinning blade grind all the base ingredients in pulses until everything is ground finely.
Transfer to the baking pan and press tightly to the bottom.
Mix cream cheese, coconut sugar, eggs and vanilla extract.
Pour half the filling on the base, sprinkle over the berries and then pour the other half.
Bake for 50 minutes.
Cool outside until room temperature and another three hours in the fridge before serving.
