1/2 cup crumbled cookies
1/2 cup melted butter
1/2 teaspoon vanilla extract
600 g cream cheese
1/4 cup melted butter
1/2 cup sugar (preferably fruit or grapes – healthier)
1 tsp vanilla extract
1 tsp grated lemon zest (yellow part only, the white part is bitter)
1 tablespoon dissolved gelatin in 2 tablespoons of cold water
1 cup of strawberry jam (preferably without sugar)
Mix the base ingredients and press into a round baking pan.
Mix all the filling ingredients except the gelatin and continue to mix until evenly mixed.
Add the gelatin and mix well.
Pour on the base and refrigerate for at least 2 hours in the fridge.
Before serving, spread the jam evenly over the top.
