A very rich soup that’s good as the main course, not a starter. Goose breasts, potatoes, carrots, leeks … A satisfying and delicious main course. Preparation is relatively simple and it’s good for a person with some experience.
1 medium onion finely chopped
200 g diced smoked goose breast or bacon
5 cups chicken or meat soup (you can use powder)
500 g diced potatoes
1 cup sour cream
1 package frozen green beans – defrosted with boiling water
1/2 pack chopped parsley
1 large leek cut into circles – only the white part
Salt, pepper and nutmeg to taste
Heat a saucepan over medium heat and add smoked goose breast/bacon (no need to add oil, the goose has enough fat to grease the pot).
Add the onion and steam for 2-3 minutes until the onion is transperent.
Add green beans, potatoes and soup.
Mix well and bring to a boil.
Lower the heat and cook over low heat for an hour.
Season with salt, pepper and nutmeg.
Remove from the fire and grind in a blender about a third (1/3) of the soup.
Add the sour cream to the ground mixture, mix well and return to the pot.
Cook while stirring over low heat for about 5 minutes without letting the soup boil.
Stir in the parsley and serve immediately.
