The beloved crumb cheesecake in a healthy, gluten-free, dietetic version that is a great treat in any attempt to lose weight or a low-carb or low-sugar diet.
Easy, simple and quick preparation, and tastes much more delicious than the “original” recipe.
Because it contains agave and not sugar it is allowed for diabetics, but don’t exaggerate, and of course only if your doctor allows agave. Although agave has a low glycemic value, it still contains fructose (fruit sugar) that you can’t exaggerate with.
Replacing the dough crumbs with almond flour crumbs both enhances the flavor and makes this cake suitable for celiac patients because it is completely gluten-free.
One personal cake contains a total of 400 calories and 61 grams of carbs, making it a delicious treat that is occasionally allowed on a diet. Don’t get confused – you can’t live on this cake and lose weight, but if once in a while you indulge in this cake during the diet it doesn’t count as breaking the diet.
500g cream cheese 5%
1 tablespoon vanilla extract
1 tablespoon lemon juice
200ml sour cream
1 cup agave nectar
1/2 cup almond flour
1/4 cup agave
Preparing the cake
Whisk all the ingredients at low speed until you have a uniform mixture.
Divide the mixture into 4 serving bowls and refrigerate for at least 8 hours. Sprinkle over the crumbs evenly. Refrigerate for another hour.
Preparing the Crumbs
Preheat oven to 180 degrees.
Mix the almond flour and agave with your hands until it’s evenly spread.
Line a baking pan with baking paper and crumble the mixture into coarse crumbs.
Bake for 7-10 minutes until the crumbs are golden-brown.
Cool before sprinkling over the cakes.
