1 medium white cabbage cut into thin strips
2 tablespoons olive or avocado oil
Juice from 2 lemons
2 tablespoons ground coriander seeds
Salt and pepper to taste
Mix all the ingredients together while crushing the cabbage with your hands until it “wilts.”
Set aside for half an hour.
Stir again, fix seasoning and serve.
The salad is good in the fridge for up to a week and after a day or two its taste improves.
