A healthy and filling salad with quinoa and chicken that even children love (judging by my son). It tastes best with cucumber, tomato and avocado, but you can make it with other vegetables too.
1 chicken breast
2/3 cup cooked quinoa
2 medium tomatoes
2 shallots (preferably) or 1/2 medium onion chopped
1 chopped garlic clove
Juice from 1/2 a lemon
2 tbsp. olive oil
Cut the chicken into thin strips or cubes.
Heat the oil in the pan and add the chicken, fry a little and add the garlic.
Continue cooking together for about 5 minutes until the chicken is ready and the house is full of garlic scent.
Mix the vegetables with the quinoa and salt, pour the chicken over the salad directly from the pan (including the oil) and mix only slightly.
