2 cups quinoa
3 cups water
A little quality oil – not olive
1 cup green lentils
1 diced large onion
1 teaspoon of cumin
Cook the lentils until they are ready. strain.
Cook the quinoa like rice until it’s ready and crumble it with a fork.
Heat the oil in a large frying pan, fry the onion until it’s golden brown.
Add the lentils and stir.
Add the quinoa and stir.
Add the cumin.
Cook 2-3 minutes wile mixing.
Taste, improve seasoning and serve.
