Red Lentil Soup with Lemon

A rich and filling soup with an amazing oriental smell. Easy to prepare even for beginners. Lentils are also an excellent source of vegetable protein for vegetarians and vegans.

Ingredients

1 large chopped onion

4 cups chicken soup (It’s OK from a powder)

3 tbsp. olive oil

1 teaspoon cumin

2 crushed garlic cloves

1 tablespoon tomato paste

Pinch of chili powder

Juice from 1/2 a lemon

Salt and pepper to taste

1 cup red lentils

1/3 cup chopped coriander

1 large coarsely grated carrot

Preparation

Heat the oil in a saucepan and fry the onion and garlic until the onion is golden.

Add the cumin, tomato paste, chili, salt and pepper and continue to fry for 1-2 minutes until the smell of spices gets stronger.

Add carrots, lentils and chicken soup.

Bring to a boil, lower the heat and cook for half an hour until the lentils are soft.

Grind the soup in a food processor or with a hand blender and transfer to a clean pot.

Add lemon juice and coriander and mix well.

Serve immediately.
