Rich Energy Bars for a Quick, Healthy Snack

Delicious energy bars that are much better than anything you can buy in a store, even a nature store. 10 minutes prep and 25 minutes baking and you have 10 delicious snacks available when you need a quick meal.


2 cups coconut chips

1.5 cups sliced almonds

1/4 cup peeled unroasted sunflower seeds

1/4 cup peeled unroasted pumpkin seeds

2 tablespoons sesame

1/2 cup almond flour

1/4 cup melted coconut oil

1/4 cup almond or chestnuts or cashews butter (you can use regular butter, but it’s less healthy)

1/4 cup honey or agave

1 teaspoon almond extract

3/4 teaspoon baking soda

2.5 tablespoons of water or some unsweetened juice

1 cup raisins


Preheat oven to 160 degrees Celsius and line a square Pyrex pan with baking paper.

Mix the wet ingredients in a bowl until the mixture is even.

Add the almond flour and baking soda and stir to an even mixture.

Add in the sliced almonds, seeds and coconut.

Mix well and add the raisin in folding motions.

Pour the mixture into the Pyrex pan and spread evenly.

Bake for 20-25 minutes until lightly browned.

Cool outside until room temperature and then transfer to the fridge for an hour.

Cut into snacks and serve.

Keeps in the fridge for up to two weeks in a sealed container.
