A special dish with zucchini from Greek cuisine. The mother of a good friend of mine who is Greek from Santorini taught me this dish. Very special and refreshing in the summer.
500 g zucchini
2 tbsp olive oil
1 small purple onion cut into stripes
4 garlic cloves – crushed
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sliced almonds
1 cup yogurt
5 finely chopped dill stems
Preheat oven to 200C.
Cut the zucchini in half lengthwise then slice into thin semicircles.
Mix the zucchini with olive oil, garlic, onions, salt, and pepper.
Spread in a large pan, put in the upper part of the oven, and grill for 15 minutes.
Mix well and grill for another 15 minutes.
Remove from the oven and cool slightly.
Add yogurt, almonds and garlic, stir, improve seasoning and serve.
