Soy Flour Sandwich Cookies

Delicious cookies that look impressive because of their appearance. The cookies themselves are chocolate with cocoa and the filling with 5% cream cheese. Almost like Orio just a lot healthier.

Cookie Ingredients

3/4 cup cocoa powder

1.5 cup soy flour

1 cup coconut sugar

1 cup butter

1/2 teaspoon salt

1 egg

1 tsp vanilla extract

1/4 teaspoon baking soda

1/4 cup tapioca flour

Filling Ingredients

1/4 cup cream cheese 5% mixed with 1/4 cup milk

2 tablespoons vanilla extract

2 tablespoons real maple syrup


Prepare a sheet of baking paper.

Mix together all the dry ingredients except the sugar.

In a separate bowl mix the eggs, sugar, butter and vanilla extract. Whisk at low speed until you get an airy mixture.

Add the dry ingredients to the wet, first mix with a spoon then continue kneading with your hands.

Roll the dough into a sausage, roll in a baking paper and refrigerate for an hour to stabilize.

Preheat oven to 180 degrees Celsius and line a cookie sheet with baking paper.

Remove the dough from the baking paper and cut it to the desired thickness.

Bake for 12-15 minutes until the cookies get flatter and crispy.

Cool completely.

Preparing the Filling & Assembling the Cookies

Whisk all the filling ingredients at low speed.

Refrigerate for half an hour to stabilize.

Spread the filling on a cookie and put another one on top like a sandwich.
