Creamy cheesecake without baking. Although it requires 8 hours of refrigeration in the fridge, its preparation is very easy and quick. Low-carb, gluten-free and sugar-free.
500g cream cheese 5%
1 tablespoon vanilla extract
1 tablespoon lemon juice
1/2 cup sour cream
1 cup agave nectar
1/2 packege of gelatin prepared according to the instructions on the packaging
A jar of sugar-free blueberry jam
Whisk all the ingredients except the blueberries and gelatin at low speed until the mixture is uniform.
Add the gelatin while continuing to whisk at the lowest speed.
Pour the mixture into a Pyrex pan and refrigerate for at least 8 hours.
Pour the blueberries over the cake and spread them evenly. Refrigerate for another hour.
