A quick and easy salad that’s very tasty and looks impressive and colorful. Excellent as a light meal or an addition to a heavier meal.
8 large cabbage leaves cut into wide strips
3 hard tomatoes, cut into semicircles
1 purple onion cut into semicircles
2-4 crushed garlic cloves
1 tsp. garlic powder
3 tbsp. apple cider vinegar
Salt and pepper to taste
Mix the vinegar with the mustard powder, garlic, salt and pepper. Mix well until there are no lumps and put aside to mix the flavors.
In a large bowl mix all the vegetables, pour the dressing over it and toss lightly until the dressing is spread evenly.
