Different pancakes with a subtle and special flavor. My son really likes this pancake and it’s a chance to sneak him some hidden vegetables in his food when he thinks he’s eating pancakes.
1 large sweet potato
1/4 tsp baking soda or 1/2 tsp baking powder
Pinch of salt
Pinch of cinnamon
Pinch of nutmeg
1/4 teaspoon grated ginger
Agave nectar or coconut sugar – not mandatory, only if the sweetness from the sweet potato and banana is not enough
Peel the sweet potato and cook in water until soft. Refrigerate for at least 10 minutes.
Grind the sweet potato in a food processor in pulses, add the eggs and banana and grind again in pulses.
Add the remaining ingredients and continue grinding in pulses until the mixture is uniform.
Fry on an oiled pan (preferably with oil spray) for three minutes on each side.
